The powdered ice-cream concentrate is intended for direct production of ice-cream mixes without the addition of eggs. The technology of producing ice-cream consists in mixing the concentrate with water in proportion 1:2,5 and leaving the mix for 15 minutes to thicken. The ice-cream mix prepared this way is suitable for production of soft ice-cream served from an automated machine which may (but do not need to) undergo pasteurization. Ice creams fabricate from concentrate are characterized fine intensive and natural taste.
