Used for quick production of rye and mixed-type bread, Biopan - S acts as a dough leavening agent giving it appropriate organoleptic properties which are typical of natural dough fermentation. Biopan-S may also be used as an additional leavening agent for leavens produced with the traditional method if, for different reasons, these have not yielded demanded acidity level.

It is dosed in the amount of 2% to the rye flour.
