The "Mambo" malt darkener is a liquid extract from roast barley malt with lowered viscosity which makes it easier to dose it and spread it within the dough. The effects of using the "Mambo" darkener is, first of all, a nice brown crumb, better taste and smell, increased volume, nice shiny crust, enhanced crumb texture and extended freshness. Dosing: 1- 4% in relation to the total flour mass (depending on the demanded crumb colour).
